Raspberry Cashew Pudding

I’ve been on the hunt to find the perfect recipe for this raspberry power pudding… I’ve tried so many variations! First with avocados, and then I moved on to cashews. This past week I blended up this simple recipe, and I think we’ve struck gold here! This is such a tasty, healthy, and filling breakfast. 

Health Benefits of Cashews!

Cashews are rich in healthy unsaturated fatty acids, fiber, vitamin B6, and minerals such as magnesium, zinc, and copper. Unsaturated fatty acids are so important for maintaining healthy cognitive function, and for reducing any inflammation in the body. Cashews are also rich in the amino acid tryptophan, which is a precursor to serotonin. As you may know, serotonin is an anti-depressant hormone which is so important for helping us feel happy! Cashews are also frequently recommended to help lower risk of heart disease, and can be beneficial for reducing stress.
