Healthy caesar salad dressings are a staple in our home, and something I've been making for a long time! Who doesn't love a caesar salad with a side of almond flour chicken fingers?!

This avocado hemp caesar dressing is a new favorite, and a recipe I'll be saving to come back to again and again. Hemp seeds and avocado come together with lemon juice, garlic, nutritional yeast, and olive oil to create a creamy, dreamy dressing that is light and absolutely delicious.
Every time I make this, I'm surprised at how much it tastes like a classic caesar dressing you'd get at a restaurant - the hemp seeds are just perfect to create that creamy caesar texture.
Best of all, this recipe happens to be dairy-free, vegan and packed with nutritious ingredients.
Ingredients

- Avocado - adds creamy texture and is packed with healthy fats and fiber
- Hemp seeds - also provides creamy, light texture and is packed with nutrients (more info below!)
- Extra virgin olive oil - has many health benefits; in particular it contains Oleocanthal, which is a powerful anti-inflammatory phenol
- Nutritional yeast - for some cheesy flavour (is dairy-free and vegan)
- Lemon juice - we're using lots of lemon juice for that zesty, bright flavour!
- Garlic - adds that classic caesar flavour, I reccomend using just one clove so it's not too overpowering
- Salt and pepper - to taste
Health Benefits of Hemp Seeds
Hemp seeds (or hemp hearts as they are often called) are packed with healthy fats, protein, and many essential nutrients! Wight a neutral, nutty, and very slightly sweet flavor they are an easy superfood to add to just about any meal. Let's take a closer look at their nutritional profile:
- Healthy fats - one serving (3 tablespoons) of hemp seeds contains 15 g of fats, of which 80% (12 g) are polyunsaturated fats; omega-6 and omega-3.
- Protein - one serving contains 10 g of protein, with 9 essential amino acids
- B Vitamins - Thiamine (Vitamin B1), Riboflavin (Vitamin B2), and pyridoxine (Vitamin B6) are all found in hemp seeds
- Minerals - hemp seeds are also a great source of magnesium, iron, Zinc, and phosphorus

Instructions
- Add all ingredients to a high speed blender
- Blend on high for 1-2 minutes, stopping to scrape down the sides if needed
- If needed, add extra lemon juice or olive oil to get the right texture
- Enjoy on romaine or kale caesar salad, with a sprinkle of hemp seeds and nutritonal yeast.
Use it Up
- On a kale caesar salad with crunchy sourdough croutons
- As a veggie dip with sticks of carrots, celery, cucumber, and bell peppers
- On a chicken caesar wrap
- Spread it on a sandwhich before assembling
- As a dip for chicken wings

You definitely could, although high-quality extra-virgin olive oil is a healthy oil that contains Oleocanthal; an anti-inflammatory phenol that has been studied for many health benefits. That being said, if you wanted to omit the olive oil you could add a little extra lemon juice and a splash of water to make sure that the dressing has enough liquid.

Storage
- Store in an airtight jar in the fridge for 4-5 days. This dressing is best stored seperately from the lettuce, to prevent it from wilting!

Ingredients
- ½ Avocado

- 1 cup Lemon juice
- ⅓ cup Olive oil
- 1 clove Garlic
- 1 tablespoon Nutritional yeast * see note 1
