It's the beginning of November and we've just had our first few nights of frost here in Ontario! Despite how late in the year it is, my herb garden was still overflowing with fresh peppermint, chives, oregano, and thyme up until I harvested them yesterday.
To make use of my herbs and preserve them for the winter, I wanted to freeze them in cubes with olive oil. That's how this mint sauce recipe came to be!
We made this last week and enjoyed it on lamb chops - which was so good. I've never enjoyed store-bought mint sauce but loved the idea of pairing mint with lamb.
This fresh mint sauce is a more bright, zesty, and fresh take on traditional mint sauce (which includes vinegar and sugar). Enjoy it right away, or freeze in cubes to keep a little bit of your herb garden stored away for the middle of winter.

Ingredients

Peppermint - I was making a large batch, so I used 4.5 cups! You'll notice the measurements are larger in the video above. I've adjusted it for a smaller batch, using 2 cups of peppermint.
Olive Oil - you could swap for avocado oil
Lemon juice - for some zesty flavor
Garlic - is optional, but pairs nicely if serving with lamb and is subtle next to the peppermint and lemon
Sea salt - brings out all the flavours
Step by Step Instructions

- Add all the ingredinets including peppermint, garlic, lemon juice, olive oil, and sea salt to a blender.
- Blend on high for 2-3 minutes until mixture is smooth. Enjoy on lamb, roasted potatoes, roasted veggies and more!

No, but in my opinion it's even better! Traditional mint sauce is sweet and vinegar-y. In contrast, this mint sauce is fresh, bright, slighyl garlic-y and zesty!
Yes! Since this recipe has lots of olive oil, it helps to preserve the herbs and works really well to freeze. I like to freeze in cubes, that way you have portioned-out mint sauce ready to thaw and enjoy fresh, or throw it right into a meal you're cooking!
Yes! You could definitely omit the garlic and salt if you wanted to make this mint sauce more flexible for other recipes that are sweet instead of savory.
Storage

Fridge - store in an airtight container in the fridge for up to 4 days.
Freeze - add to ice cube tray to freeze in cubes. Store in a sealed reusable bag in the freezer for up to 4 months.
